Simon Erwin Schillinger (born c. 1862 in Louisville, Kentucky; died November 29, 1900) was superintendent of the bottling department at the Schillinger Brewing Co.'s Birmingham Brewery and an aide to Governor Joseph Johnston.

Schillinger and his brothers came with their father, Philip Schillinger to Birmingham in the 1880s and began operating the city's largest brewery.

Schillinger married the former Bertha Botzin of Louisville in 1886 and had two children, Carl and Edna. He was commissioned a Colonel in the Knights of Pythias on April 18, 1893 and was crowned Rex Vulcan I during the city's 1896 Mardi Gras festivities.

Schillinger died at age 38 from Bright's disease (acute nephritis).
